 Enchiladas

 

Simple recipe and quick prep...
 

1 ˝ lbs 

 

hamburger or chicken

 

1 cup 

 

canned enchilada sauce

 

1 cup 

 

cram of chicken or mushroom soup

 

1 can 

 

sliced olives, drained

 

1 small 

 

onion, chopped

 

1 cup 

 

milk

 

1 can 

 

mild green chilies, chopped

 

1 cup 

 

grated sharp cheddar cheese

 

1 package 

 

tortillas

Preheat oven to 350 degrees F.

Brown meat and onion in large sauté pan. Remove excess oil. Add all other ingredients except cheese and tortillas.

In large casserole dish, place a layer of tortillas on the bottom. Spread a layer of sauce on top of the tortillas. Alternate tortillas and sauce until you run out. Sprinkle cheddar cheese on top.

Cover with foil or lid. Bake 1 to 1 ˝ hours. Uncover for the final 10 minutes of baking.
