Feta- Topped Broiled Chicken

 

 

Inspired by Mediterranean flavors...
 

 

 

RUB:

 

2 Tbs 

 

no-salt added tomato paste

 

1 tsp 

 

red wine vinegar

 

½ tsp 

 

dried rosemary

 

½ tsp 

 

dried oregano

 

½ tsp 

 

paprika

 

½ tsp 

 

salt

 

¼ tsp 

 

freshly ground black pepper
 

 

 

 

CHICKEN:

 

4 skinless 

 

boneless chicken breast halves (about 1 lb. total)

 

1 large 

 

plum tomato, halved and thinly sliced

 

½ cup 

 

crumbled feta cheese (2 ounces)

In a small bowl, stir together the tomato paste, vinegar, rosemary, oregano, paprika, salt and pepper. Rub the mixture onto the chicken breasts and set aside.

Preheat the broiler. Broil the chicken 6 inches from the heat, turning once- 6 to 8 minutes per side.

Top the chicken with tomato slices and broil for 1 to 2 minutes. Top with feta and broil until feta browns slightly .

Serve immediately.
