 Passover Lemon Chicken

 

A Passover favorite...
 

½ cup 

 

fresh lemon juice

 

¼ cup 

 

dry white wine

 

¼ cup 

 

oil

 

1 clove 

 

garlic, minced

 

3 whole 

 

chicken breasts, skinless/boneless and halved

 

½ cup 

 

matzo meal

 

1 tsp 

 

salt

 

1 tsp 

 

fresh ground pepper

 

1 Tbs 

 

paprika

Mix lemon juice, wine, oil and garlic in a large freezer ziploc bag. Add chicken, zip closed, and marinate at least 6 hours, or overnight. in the refrigerator.

Preheat oven to 375 degrees F. Grease rimmed baking sheet.

Remove chicken from marinade, reserving the marinade. Place marinade in small saucepan and heat to boiling; reduce to simmer.

Mix matzo meal, salt, pepper and paprika. Dip chicken in seasoned matzo, coating completely. Shake off excess. Place coated chicken on baking sheet.

Bake 45-50 minutes, or until tender, basting with reserved marinade at 15 minute intervals during cooking time.
