 Shrimp Victoria

 

Creamy and yummy shrimp dish...
 

1 lb 

 

medium shrimp, cleaned, peeled and de-veined

 

¼ cup 

 

minced onion

 

5 Tbs 

 

butter, divided

 

½ lb 

 

mushrooms, sliced

 

 

 

 

 

1 Tbs 

 

flour

 

 

 

salt and pepper to taste

 

1 cup 

 

nonfat sour cream

 

1 medium 

 

red bell pepper, chopped

 

1 medium 

 

yellow bell pepper, chopped

Sauté shrimp and onion in 4 T. butter until shrimp are pink. Add mushrooms and cook an additional 5 minutes. Stir in remaining butter, flour, salt and pepper. Cook 1 minute. Stir in sour cream and bell peppers and cook until heated through.

Serve over lemon rice: (rice with the juice of one lemon, plus some grated lemon peel).
