Grilled Mahi Mahi with Grilled
Pineapple Salsa and Lemon Butter

 

Just like you're in Hawaii!
 

Four 8oz. 

 

portions of mahi mahi, skinned and boned

 

 

 

salt and pepper to taste
 

 

 

 

SALSA:

 

½ fresh 

 

pineapple, peeled and sliced to ¼" thickness

 

1 red 

 

bell pepper, seeded and diced ¼"

 

½ medium 

 

red onion, diced ¼"

 

½ bunch 

 

cilantro, chopped

 

1 medium 

 

serrano pepper, seeded and chopped

 

 

 

salt and pepper to taste

 

1 tsp 

 

ground cumin

 

1 cup 

 

rice wine vinegar

 

¼ cup 

 

olive oil
 

 

 

 

LEMON BUTTER:

 

1 cup 

 

butter

 

¼ cup 

 

fresh lemon juice

 

1 tsp 

 

garlic, minced

Heat grill to medium-high and season the fish with salt and pepper.

Grill pineapple until tender; not falling apart or mushy. Let cool, dice and mix with the remainder of the vegetables and the seasonings, vinegar and olive oil. Let pineapple salsa marinate for 3-5 hours.

Melt butter and mix with lemon juice and garlic.

Grill fish and top with salsa. Drizzle with lemon butter.
