SALSA: |

fresh |

pineapple, peeled and sliced to ¼"
thickness |

pepper, seeded and diced ¼" |

onion, diced ¼" |

bunch |

cilantro, chopped |
|
|

serrano pepper, seeded and chopped |

and pepper to taste |

ground cumin |

rice
wine vinegar |

olive oil

LEMON BUTTER: |
|

butter |

fresh lemon juice |

Heat grill
to medium-high and season the fish with salt and
pepper. |

Grill
pineapple until tender; not falling apart or
mushy. Let cool, dice and mix with the remainder
of the vegetables and the seasonings, vinegar
and olive oil. Let pineapple salsa marinate for
3-5 hours. |

Melt butter
and mix with lemon juice and garlic. |

Grill fish
and top with salsa. Drizzle with lemon butter. |
