Rinse
scallops, drain, and dip in cornstarch. Pan-fry
both sides of scallops in a non-stick pan until
golden brown. Set aside. |

Stir-fry
spinach in ½ teaspoon of salt, ½ teaspoon of
sugar, 1 Tablespoon of sesame oil and the
cooking oil. Drain excess liquid and set aside
on a warm plate. |

Stir fry
green onion, garlic and chili pepper until
fragrant, about 1 minute. Add scallops and
sprinkle with salt and pepper and 2 teaspoons of
sesame oil. |

Place the
scallops on the spinach and serve. |
