 Rack of Lamb

salt and pepper to taste

 

3 Tbs 

 

olive oil

 

3 Tbs 

 

fine breadcrumbs

 

1 Tbs 

 

parsley

 

1 tsp 

 

oregano

 

1 tsp 

 

chopped shallots

 

½ tsp 

 

chopped garlic

 

 

 

pinch of anise seed (optional)

Preheat oven to 400 degrees F.

Season lamb with salt and pepper. Roast, uncovered, for 25 minutes.

In small bowl, mix together oil, breadcrumbs, and seasonings. Work mixture into a paste and spread on top of lamb (make more paste if needed).

Roast lamb 15 minutes more, depending on degree of desired doneness.

 Cooking Tips

*For more than one rack of lamb, increase cooking time 10 minutes per rack in each step.
