Veal Medallions with Mushroom Sauce

 

Simple and delicious veal entree...
 

1½ lbs 

 

veal medallions

 

¼ cup 

 

butter

 

1 clove 

 

garlic, minced

 

½ lb 

 

sliced mushrooms

 

2 Tbs 

 

fresh lemon juice

 

½ cup 

 

dry vermouth

 

2 Tbs 

 

fresh chopped parsley

In a large skillet, melt butter. Add garlic and sauté veal. Add mushrooms and lemon juice. Pour in vermouth; cover and simmer on low heat for about 20 minutes.

Remove veal to a platter and sprinkle with parsley.
