 Barbecued Leg of Lamb in Sweet
Wine Marinade

 

Great flavored meat to throw on the grill...
 

1 boned 

 

leg of lamb

 

8 cloves 

 

garlic

 

1 cup 

 

honey

 

2/3 cup 

 

dried mint flakes

 

1 bottle 

 

chenin blanc

Remove membrane from lamb with a sharp small knife. Make 8 slits in the lamb and insert 1 garlic clove into each slit. Spread honey over lamb and sprinkle with the mint. Press the mint into the surface of the lamb. Place lamb in a large ziploc baggie and pour the wine into the bag. Seal and let marinate for at least one day (and up to 3 days). Turn occasionally.

When ready for grilling, discard the marinade and grill for 45 minutes, or until cooked to desired doneness.

Slice and serve.
