Great Italian side dish

olives, pitted and halved |

arugula, stems trimmed, cut into wide ribbons |

In a medium bowl,
combine tomatoes, olive and onion. Add oil and vinegar
and toss to blend flavors. Season to taste with salt and
pepper. Mix in arugula and divide between 4 plates. |
