Chicken- Apple Crunch Salad

 

Inspired by the classic Waldorf salad...
 

2 cups 

 

cubed cooked chicken breast

 

1 cup 

 

diced Granny Smith apple

 

½ cup 

 

diced celery

 

¼ cup 

 

dried cranberries (or craisins)

 

2 Tbs 

 

chopped green onions

 

1/3 cup 

 

light mayonnaise

 

1 Tbs 

 

light sour cream

 

1 tsp 

 

fresh lemon juice

 

¼ tsp 

 

salt

 

¼ tsp 

 

freshly ground black pepper

 

1/8 tsp 

 

ground cinnamon

 

 

Combine first 5 ingredients in a large bowl. Combine mayonnaise and remaining ingredients, stirring well with a whisk. Add mayonnaise mixture to chicken mixture, tossing well to coat.

 

Servings: 4

Yield: Serving Size 1 cup
