 Curried Rice Salad

 

Delicious, chilled and flavorful salad...
 

2 Tbs 

 

vegetable oil

 

2 tsp 

 

white wine vinegar

 

1 tsp 

 

curry powder

 

3 Tbs 

 

mango chutney

 

2 medium 

 

tomatoes, seeded and chopped

 

2 Tbs 

 

golden raisins

 

1 green 

 

bell pepper, seeded and julienned

 

1 stalk 

 

celery, chopped

 

2 Tbs 

 

parsley, chopped

 

2 cups 

 

cooked rice, chilled

 

 

 

salt and pepper to taste

 

 

 

several whole leaves of red or green leaf lettuce

In large bowl, mix oil, vinegar, curry and chutney. Add tomato, raisins, pepper, celery and parsley; toss with the rice. Season with salt and pepper to taste.

Chill for several hours before serving. Serve in lettuce-lined bowl.
