salad...

slivered shallots or red onion |

mustard |

white wine
vinegar |

pre-packaged
spinach leaves, rinsed, dried and chilled |

crumbled blue cheese or goat cheese |

Combine shallots,
mustard, vinegar and oil. Cover, and chill. |

When ready to serve,
toss spinach leaves with blended and chilled dressing.
Sprinkle with crumbled cheese. |
