Spinach Salad with Shallots and Crumbled Cheese

 

Simple and flavorful salad...
 

1/8 cup 

 

finely slivered shallots or red onion

 

½ Tbs 

 

dijon mustard

 

¼ cup 

 

white wine vinegar

 

¼ cup 

 

olive oil

 

2 bags 

 

pre-packaged spinach leaves, rinsed, dried and chilled

 

½ cup 

 

(4 oz.) crumbled blue cheese or goat cheese

Combine shallots, mustard, vinegar and oil. Cover, and chill.

When ready to serve, toss spinach leaves with blended and chilled dressing. Sprinkle with crumbled cheese.
