 Spinach, Orange and Avocado Salad

 

A great salad in itself...
 

2 Tbs 

 

fresh parsley, chopped

 

1 large 

 

shallot, chopped finely

 

½ tsp 

 

dry mustard

 

½ tsp 

 

celery seed

 

2 Tbs 

 

honey

 

¼ cup 

 

canola oil

 

1/3 cup 

 

cider vinegar

 

1 bunch 

 

spinach, cleaned and torn into pieces

 

1 can 

 

mandarin oranges, rinsed and drained

 

1 large 

 

avocado, diced

Place parsley, shallot, mustard, celery and honey in blender. Begin blending. Pour into small bowl and whisk in oil and vinegar. Chill until ready to serve.

Taste... add more honey for sweeter dressing. Add more parsley for more peppery flavor.

Combine spinach, mandarin oranges and avocado with dressing to taste.
