potatoes, peeled |

dry
white wine |
|

|
chicken broth |
|
|
1/3
cup |
|
minced fresh parsley |
|
|
1/3
cup |
|
sliced scallions |
|
|

|
crumbled blue cheese |
|

vinaigrette dressing |

bacon, cooked, drained & crumbled |

salt
and pepper to taste |

Steam new
potatoes in large steamer basket over boiling
water until tender. Let them cool slightly, and
quarter them. |

In a large
bowl, combine warm potatoes with wine, chicken
broth, parsley and scallions, tossing mixture
gently. Let cool. |

Add blue
cheese and vinaigrette. Toss mixture gently. |

Chill salad
overnight. Transfer salad to a salad bowl.
Sprinkle with crumbled bacon and serve at room
temperature. |
