 Cooking Tips

**This recipe has many ingredients and is rather labor-intensive. It's well worth the work though! The great thing is that you can prepare it the night before your event. You can lighten it up a bit by using less oil, more lemon juice and turkey bacon.  Use pre-cooked chicken if you’re short on time…

**Sun-dried tomatoes are sold pre-packaged and already cut into strips (rather than packed in oil). To soften them up, put them in a small bowl of water and microwave for 2 minutes!

Restaurant Quality!- would make it again.  "Since this made a lot, I made this to serve at my son's birthday party.  The kids and adults loved it.  The lemon flavor is so good.  It was a bit time intensive, but I made it the night before and all was easy the next day."
