Vinaigrette" for this lovely salad...

prosciutto, diced |
|

red
and yellow bell peppers, julienned |

baby
spinach, cleaned and patted dry |

crumbled bleu cheese |

crumbled goat cheese |

thinly sliced shiitake mushrooms |

Sangiovese Vinaigrette |

Brown
prosciutto in sauté pan. Drain. |

to serve, toss all ingredients except for
dressing and onion in large salad bowl. Add just
enough dressing to lightly coat the greens. |

on chilled plates and top with shaved red onion |
