Spinach and Prosciutto Salad

Spinach and Prosciutto Salad

Use the "Sangiovese Vinaigrette" for this lovely salad...

1 cup		prosciutto, diced
1 cup		red and yellow bell peppers, julienned
4 cups		baby spinach, cleaned and patted dry
½ cup		crumbled bleu cheese
½ cup		crumbled goat cheese
½ cup		thinly sliced shiitake mushrooms
¼ cup		Sangiovese Vinaigrette
½ cup		thinly shaved red onion

1	Brown prosciutto in sauté pan. Drain.
2	When ready to serve, toss all ingredients except for dressing and onion in large salad bowl. Add just enough dressing to lightly coat the greens.
3	Mound salad on chilled plates and top with shaved red onion

Servings: 6
