extra-virgin olive oil |
|

chopped fresh mint |

seedless watermelon, flesh removed and
cut into bite-sized pieces |

Vidalia or other sweet onion, peeled and
sliced into rings |

ounces |
|
feta
cheese, crumbled |
|

whole mint |

sprigs |

Prepare
dressing: In a small bowl, combine vinegar, salt
and pepper. Whisk until salt is dissolved.
Slowly whisk in olive oil, a few drops at a
time. Add in the chopped mint, taste and adjust
seasonings. |

In a large
bowl, combine the melon, onion and feta. Pour
dressing over melon mixture a little at a time
until you reach the desired amount. Toss gently
until everything is coated and evenly mixed. |

To serve,
divide salad among six plates and garnish with
mint leaves. |
