 Blender Hollandaise Sauce

 

Easy...
 

½ cup 

 

butter

 

3 large 

 

egg yolks

 

2 Tbs 

 

fresh lemon juice

 

¼ tsp 

 

salt

 

pinch of 

 

cayenne pepper

 

 

In a small saucepan, heat butter to bubbling, but do not let it brown. Put rest of ingredients in blender. Cover container and turn on low speed. Immediately remove cover and pour in the hot butter in a slow, steady stream. When all butter is added, turn off motor.

 

Yield: 3/4 cup
