 Cabernet Mashed Potatoes

 

This side-dish accompanies beef dishes nicely...
 

12 medium 

 

red potatoes, washed and cut in half

 

¼ cup 

 

half and half

 

½ cup 

 

Cabernet Sauvignon

 

 

 

Kosher salt and fresh ground pepper to taste

Boil potatoes until fork tender.

While potatoes are cooking, simmer wine in small saucepan until reduced to ¼ cup.

Drain cooked potatoes and return to same pot. Mash, adding wine and half and half until it reaches desired consistency. Season with salt and pepper.

Serve immediately.

 Cooking Tips

**If your potatoes are done before you are ready to serve them, keep them warm over a pan of simmering water.
