Orange Rice

 

Full of great fresh orange flavor...
 

1 cup 

 

uncooked white rice

 

¾ cup 

 

chopped celery

 

1 Tbs 

 

chopped yellow onion

 

2 cups 

 

unsweetened orange juice

 

2 tsp 

 

grated orange peel

 

½ tsp 

 

salt

Preheat oven to 350°F.

Coat a large skillet with cooking spray, and place over medium heat until hot. Add rice, celery and onion; cook, stirring occasionally, until rice is lightly browned. Add remaining ingredients and bring to a boil. Pour mixture into a 1½ quart casserole.

Cover and bake for 25 to 30 minutes, until rice has absorbed most of the liquid.
