 Spanish Rice

 

Great with tacos and refried beans...
 

8 slices 

 

bacon

 

1 cup 

 

finely chopped onion

 

¼ cup 

 

chopped green pepper

 

16 oz 

 

can chopped tomatoes with juice

 

1½ cups 

 

water

 

¾ cup 

 

uncooked long-grain rice

 

½ cup 

 

chili sauce

 

1 tsp 

 

salt

 

1 tsp 

 

brown sugar

 

½ tsp 

 

Worcestershire sauce

 

 

 

pepper to taste

In a 10" skillet, cook bacon until crisp. Remove bacon from pan. Pour off half of the bacon fat. In remaining fat, cook onion and green pepper until tender, but not brown. Add remaining ingredients and stir well.

Cover pan and simmer 35-40 minutes, until rice has absorbed liquid.

Crumble bacon on top.
