Yukon Gold potatoes, peeled, washed and
quartered |

unsalted butter, divided |

milk |

fresh squeezed lemon juice |

fresh grated lemon zest |

capers, rinsed and drained and chopped
finely |

fresh flat-leafed parsley, finely
chopped |

fresh ground pepper |

In large
saucepan, boil potatoes in water over high heat.
Add 1-2 teaspoons of salt and reduce heat to
simmer. Cook until potatoes are tender (about 15
min.). Drain potatoes and mash them. |

In a medium
saucepan over medium heat, combine 5 T. butter,
milk, lemon juice /zest and capers. Heat until
butter is melted. |

Fold the
milk mixture and parsley into the mashed
potatoes, and season with salt and pepper. Dot
with remaining 1 T. butter just before serving. |
