uncooked white rice |

chopped celery |

chopped yellow onion |

unsweetened orange juice |

grated orange peel |

Preheat oven
to 350°F. |

Coat a large
skillet with cooking spray, and place over
medium heat until hot. Add rice, celery and
onion; cook, stirring occasionally, until rice
is lightly browned. Add remaining ingredients
and bring to a boil. Pour mixture into a 1½
quart casserole. |

Cover and
bake for 25 to 30 minutes, until rice has
absorbed most of the liquid. |
