Pine Nut Lemon Rice
 

Pine Nut Lemon Rice

 

Nice, light and flavorful side dish...
 

1 Tbs 

 

julienned lemon peel

 

3 cups 

 

water, divided

 

4 Tbs 

 

butter, divided

 

1 Tbs 

 

salt

 

1 cup 

 

long-grain rice

 

½ cup 

 

toasted pine nuts

 

¼ cup 

 

fresh lemon juice

 

 

 

chopped fresh chervil

Place lemon peel in ½ cup rapidly boiling water for 5 minutes. Drain, and reserve peel.

Bring 2½ cups water to boil in 2 quart saucepan. Stir in 2 Tbs. butter and salt, then rice. Reduce heat to low, cover and cook 20 minutes. Uncover and cook until moisture evaporates (about 5 minutes).

Meanwhile, melt 2 Tbs. butter in skillet over low heat. Add nuts, peel and juice. Stir until heated through. Pour over rice. Fluff with a fork. Garnish with chervil.

 

Yield: 3 cups
