Nice, light and
flavorful side dish...

julienned lemon peel |

water, divided |

butter, divided |
|

salt |

long-grain rice |

toasted pine nuts |

fresh lemon juice |

Place lemon
peel in ½ cup rapidly boiling water for 5
minutes. Drain, and reserve peel. |

Bring 2½
cups water to boil in 2 quart saucepan. Stir in
2 Tbs. butter and salt, then rice. Reduce heat
to low, cover and cook 20 minutes. Uncover and
cook until moisture evaporates (about 5
minutes). |

Meanwhile,
melt 2 Tbs. butter in skillet over low heat. Add
nuts, peel and juice. Stir until heated through.
Pour over rice. Fluff with a fork. Garnish with
chervil. |
