long-grain rice |

onions, finely chopped |

garlic, minced |
|

tomatoes, peeled and chopped |

chicken broth |

jalapeño peppers or pasilla chiles,
seeded and chopped |

chopped fresh cilantro |

small pimento-stuffed olives |

In a wide
frying pan over medium-high heat, brown rice
lightly in butter. |

Add onion,
garlic, tomato, and chiles, and cook for 2 to 3
minutes; add 3 cups of the broth. |

Cover and
simmer 25 to 35 minutes or bake, covered, in a
preheated 350°F. oven for 50-60 minutes. |

Add more
broth, if needed, to cook rice. However, all
liquid should be absorbed when rice is tender to
the bite. |

Stir in
cilantro just before serving. Garnish rice with
olives. |
