Sopa Seca De Arroz
 

Sopa Seca De Arroz (Mexican Rice)

 

Wonderful Mexican side dish...
 

2 cups 

 

long-grain rice

 

6 Tbs 

 

butter

 

2 small 

 

onions, finely chopped

 

3 cloves 

 

garlic, minced

 

4 medium 

 

tomatoes, peeled and chopped

 

4 cups 

 

chicken broth

 

2 medium 

 

jalapeño peppers or pasilla chiles, seeded and chopped

 

2 Tbs 

 

chopped fresh cilantro

 

1 cup 

 

small pimento-stuffed olives

In a wide frying pan over medium-high heat, brown rice lightly in butter.

Add onion, garlic, tomato, and chiles, and cook for 2 to 3 minutes; add 3 cups of the broth.

Cover and simmer 25 to 35 minutes or bake, covered, in a preheated 350°F. oven for 50-60 minutes.

Add more broth, if needed, to cook rice. However, all liquid should be absorbed when rice is tender to the bite.

Stir in cilantro just before serving. Garnish rice with olives.
