rice, rinsed and drained |

grated sharp cheddar cheese |

sliced black olives |
|

canned diced tomatoes with juice |

fresh sliced mushrooms |

chopped onions |

vegetable oil |

and pepper to taste |

hot
water |

extra cheese |

Soak rice in
water overnight; drain. |

Preheat oven
to 350 degrees F. Butter a covered casserole
dish. |

Mix all
ingredients except hot water and extra cheese.
Pour into prepared dish. |

Stir in hot
water. Cover and bake 1½ hours, checking several
times to make sure it doesn't dry out. Add more
water if necessary. Rice should be tender. |

Before
serving, sprinkle with extra cheese. |
