Asparagus with Feta Vinaigrette

serve alongside salmon with extra vinaigrette drizzled
upon it...

crumbled feta cheese

fresh lemon juice

fresh orange juice

water

tsp
dijon mustard

tsp
vegetable oil

drops
tabasco sauce

diced red bell pepper

Snap off
tough ends of asparagus. Remove scales with a
knife or vegetable peeler, if desired. Steam
asparagus for just a couple of minutes until
crisp-tender. Remove from heat; place in
covered dish and chill until ready to use.

Combine feta
cheese, juices, water, dijon mustard, vegetable
oil, and hot sauce; stir with a whisk. Divide
asparagus evenly among 4 plates, and top each
serving with 2 Tablespoons feta dressing and 2
Tablespoons red bell pepper.
