 Green Beans and Red Bell Pepper in Balsamic Vinegar

 

Nice side dish to grilled steak...
 

2 Tbs 

 

extra virgin olive oil

 

1 medium 

 

red bell pepper, cut into ¼" strips

 

2 cloves 

 

garlic, finely minced

 

1 ½ lbs 

 

fresh green beans, blanched

 

¼ cup 

 

balsamic vinegar

 

 

 

salt and pepper to taste

 

 

 

fresh grated Parmesan (optional)

In large skillet, sauté bell pepper in oil until tender. Add garlic, green beans, vinegar, salt and pepper. Heat until beans are warmed.

Serve hot and topped with fresh grated Parmesan.
