 Green Beans with Shallot Sauce

 

This buttery shallot sauce is a winner...
 

2 lbs 

 

green beans, trimmed

 

3 tbs 

 

butter, divided

 

1 cup 

 

diced shallots

 

½ tsp 

 

salt

 

1/8 tsp 

 

pepper

Steam beans 7-10 minutes, then chill overnight. Meanwhile, melt 2 T. butter in 12" skillet over medium heat. Cook butter, stirring occasionally, until lightly browned and fragrant (7 minutes), being careful not to burn. Transfer browned butter to cup, scraping skillet with rubber spatula.

Melt remaining 1 T. butter in same skillet over medium heat. Add shallots; cover and cook, stirring, 8-10 minutes until lightly browned. Add beans, reserved brown butter, salt and pepper. Cook 4 minutes more until heated through.
