green beans, cleaned and trimmed |

butter, softened |

kalamata olives, pitted and finely
chopped |

tomato paste |

freshly grated lemon peel |

Add beans to
a large pot of boiling water and cook 4 minutes
or until crisp tender. Drain in a colander.
Rinse under running water until cool. Pat dry
with paper towels. |

Mix
remaining ingredients (except tomato) in a small
bowl until blended. |

When ready
to serve, bring ½ cup water to a boil in a large
pot. Add beans and cook 4 minutes until hot and
water has evaporated. Remove from heat and add
butter mixture. Toss until melted. Transfer to
serving bowl and sprinkle with tomato. |

|
*This recipe may be
prepared ahead of time. Cook beans and refrigerate in
plastic ziploc bag. Cover butter mixture and
refrigerate. |
