 Haricots Verts with Red Bell Peppers and Pine Nuts

 

This tasty side-dish is beautiful when displayed in a glass bowl...
 

1 lb 

 

fresh haricot verts, washed and trimmed

 

1 Tbs 

 

olive oil

 

1 medium 

 

red bell pepper, seeded and diced

 

2 Tbs 

 

butter

 

1 clove 

 

garlic, minced

 

˝ cup 

 

toasted pine nuts

In large pot, place haricot verts into boiling water and cook for 3 minutes. Drain and rinse with cold water.

Heat oil in large sauté pan over medium heat. Add peppers and sauté until tender (about 3 minutes). Add butter and garlic- stir for 1 minute. Add haricot verts and sauté until heated. Mix in nuts and season with salt and pepper.

 

Servings: 6

 

 Cooking Tips

**Try using yellow bell peppers in place of the red.
