 Tomatoes Stuffed with Feta

 

Large, fresh tomatoes are great in this side-dish...
 

4 x-tra large 

 

tomatoes

 

4 oz 

 

feta cheese, crumbled

 

¼ cup 

 

dry breadcrumbs

 

2 Tbs 

 

green onions, chopped finely

 

2 Tbs 

 

fresh chopped parsley

 

2 Tbs 

 

extra-virgin olive oil

Preheat oven to 350 degrees F.

Cut tomatoes in half horizontally. Scoop out pulp from each tomato half (save shells). Discard the seeds and chop up the pulp.

In medium bowl, mix pulp and remaining ingredients. Blend together well.

Spoon mixture into tomato shells and place in 13x9" dish. Bake for 15 minutes.
