Beets in Orange Vinaigrette

 

Great flavorful veggie side dish...
 

2 1 lb. 

 

jars of sliced beets

 

¼ cup + 2 Tbs 

 

frozen orange juice concentrate, thawed

 

¼ cup + 2 Tbs 

 

cider vinegar

 

1½ Tbs 

 

dijon mustard

 

1½ Tbs 

 

soy sauce

 

3 Tbs 

 

oil

Rinse beets, drain and blot dry. Combine beets with remaining ingredients. Chill, marinating beets a minimum of 6 hours, but preferably overnight.

Drain and serve.
