Green Beans with Tomato-Olive Butter

 

Nice recipe for a large dinner party...
 

3 lbs 

 

green beans, cleaned and trimmed

 

4 Tbs 

 

butter, softened

 

¼ cup 

 

kalamata olives, pitted and finely chopped

 

1 Tbs 

 

tomato paste

 

1 tsp 

 

freshly grated lemon peel

 

¼ tsp 

 

salt

 

1/8 tsp 

 

pepper

 

1 small 

 

tomato, seeded and diced

Add beans to a large pot of boiling water and cook 4 minutes or until crisp tender. Drain in a colander. Rinse under running water until cool. Pat dry with paper towels.

Mix remaining ingredients (except tomato) in a small bowl until blended.

When ready to serve, bring ½ cup water to a boil in a large pot. Add beans and cook 4 minutes until hot and water has evaporated. Remove from heat and add butter mixture. Toss until melted. Transfer to serving bowl and sprinkle with tomato.

 

Servings: 12

 

 Cooking Tips

*This recipe may be prepared ahead of time. Cook beans and refrigerate in plastic ziploc bag. Cover butter mixture and refrigerate.
