This is a great

onion, yellow |

garlic |

olive oil |

grated lemon rind |
|

Preheat oven
to 425 degrees. |

Cut zucchini
into ½" thick rounds. In shallow baking dish,
toss zucchini with sliced onion, whole garlic
cloves, olive oil, lemon rind, thyme, salt and
pepper. Roast in oven for 20 minutes, stirring
twice. |

Sprinkle
pine nuts on top and cook for 10 additional
minutes. |

make it again.
"I've made this twice. It had better flavor when I toasted
the pine nuts first. They did not seem to roast enough when
they were placed into the oven at the end. Otherwise a very
flavorful recipe."
