Black Bean Turkey Sausage Chili

 

Healthy and flavorful...
 

2 Tbs 

 

olive oil

 

2 medium 

 

onions, chopped

 

1 red bell 

 

pepper, seeded and chopped

 

1 lb 

 

Italian turkey sausage

 

2 lbs 

 

ground turkey

 

6 cloves 

 

garlic, minced

 

8 oz 

 

diced green chilies

 

½ tsp 

 

pepper

 

1 tsp 

 

salt

 

3 Tbs 

 

chili powder

 

1 Tbs 

 

dried oregano

 

1 Tbs 

 

dried basil

 

12 oz 

 

can tomato paste

 

28 oz 

 

can Italian plum tomatoes, with juice

 

16 oz 

 

can Italian plum tomatoes, with juice

 

1 bottle 

 

good beer

 

32 oz 

 

can black beans, rinsed and well drained

 

¼ cup 

 

chopped fresh cilantro

In a large skillet, heat oil over low heat. Sauté onions and pepper for 10 minutes, or until tender but not browned.

Turn up heat to medium and add sausage and turkey. Cook until browned. Drain excess fat from pan.

Add garlic, chilies, pepper, salt, chili powder, oregano, basil and tomato paste. Stir in tomatoes, beer and beans.

Simmer over low heat for 20-30 minutes. Taste to adjust seasonings.

Stir in cilantro before serving.
