 Chilled Avocado Soup

 

From elegant dinner parties to picnics, this is a year-round favorite...
 

1 quart 

 

heavy whipping cream

 

1 Tbs 

 

sour cream

 

2 cups 

 

cold chicken stock

 

12 medium 

 

avocados, peeled and chopped

 

2 medium 

 

tomatoes, diced

green onions, chopped

 

1 bunch 

 

cilantro, minced

 

1 tsp 

 

chili powder

 

1 tsp 

 

tabasco

 

1/8 cup 

 

lemon juice

 

 

 

garlic, salt and white pepper to taste

Combine heavy cream, sour cream and broth in large bowl. Add avocados and stir well to break up. Add remaining ingredients and mix well.

Season with garlic, salt and white pepper to taste.

 

Servings: 12

Yield: 2 1/2 to 3 quarts
