 Chilled Blueberry Soup

 

An amazing, fresh treat on a warm day...
 

4 cups 

 

fresh blueberries

 

1 cup 

 

fresh orange juice

 

½ cup 

 

granulated sugar

 

¼ tsp 

 

ground allspice

 

1/8 tsp 

 

salt

 

1 Tbs 

 

fresh lemon juice

 

1 pint 

 

half and half cream

 

4 Tbs 

 

plain nonfat yogurt

In saucepan over medium-high heat, place blueberries, orange juice, sugar, allspice and salt. Bring to a boil, stirring often. Remove from heat and let cool for 15 minutes.

After mixture has cooled, place blueberry mixture and lemon juice in blender or food processor and process until smooth. Stop occasionally and scrape down the sides.

Cover and chill until ready to serve.

Stir in half and half just before serving. Place a dollop of yogurt on top of each portion.

 

Servings: 4

 

 Cooking Tips

*Serve in martini glasses or another cute, stemmed glass.

*Garnish with mint leaves, if desired.
