White Chicken Chili with Aged Cheddar Cheese

olive oil

 

1 medium 

 

onion, peeled and diced

 

1 medium 

 

yellow bell pepper, stemmed, seeded and chopped

 

1 medium 

 

orange bell pepper, stemmed, seeded and chopped

 

1 Tbs 

 

minced fresh jalapeño (seeds removed)

 

1½ tsp 

 

ground cumin

 

15 ounce 

 

can cream-style corn

 

7 ounce 

 

can diced mild green chiles (squeeze out liquid)

 

2 cups 

 

whole milk

 

15 ounce 

 

can navy beans, rinsed and drained

 

2 cups 

 

shredded cooked chicken

 

 

 

salt and pepper to taste

 

1½ cups 

 

shredded aged cheddar cheese

In a large pan, combine oil, onion, bell peppers and jalapeños. Stir often over high heat until onion is limp, 3 to 4 minutes. Add cumin, corn, chiles, milk and beans. Bring to a boil; reduce heat, cover and simmer, stirring occasionally to blend flavors, about 10 minutes. Stir in chicken. Season with salt and pepper.

When ready to serve, stir in cheddar cheese and serve immediately.
