A simple and
quick stew recipe..

butter |

whole |

carrots, peeled and chopped |
|

celery stalks, chopped |
|

medium |
|
onion, chopped |
|

|
cloves of garlic, chopped |

cup |

pearl barley, rinsed |
|
|

cups |

canned beef broth |
|

|
cooked lamb, cut into ˝" pieces |

|
Melt butter
in heavy Dutch oven over medium-high heat. Add
carrots, celery, onion and garlic; sauté until
beginning to soften, about 8 minutes. Add
barley; stir until coated, about 2 minutes. Add
broth and simmer until barley is tender, about
45 minutes. Add lamb and heat through. |
