MINI CHERRY CHEESECAKE BITES

¾ cup sugar
16 oz cream cheese
2 tsp vanilla
vanilla wafers
can of cherry pie filling
1. Preheat oven to 375 degrees F. Line cupcake tins with 16-18 paper liners.

MINI TOFFEE CRUNCH CHEESECAKES

CRUST:
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
5 Tbsp. unsalted butter, melted
2 Tbsp. (packed) brown sugar
1 Tbsp. very finely chopped crystallized ginger (or ½ tsp. ground ginger)
CHEESECAKE:
Four 8-ounce packages cream cheese, at room temperature
1 (packed) cup brown sugar
2 Tbsp. butter, melted
5 large eggs, at room temperature
1 tsp. vanilla extract
