Ingredients
- 1 cup uncooked long-grain rice
- 2½ cups low-sodium chicken broth
- ¼ teaspoon saffron, dissolved in 1 tablespoon boiling water
- ¼ cup golden raisins
- 1 whole bay leaf
- 1 medium garlic clove, crushed
- ½ teaspoon salt
- ⅙ teaspoon pepper
Instructions
- In a medium saucepan, combine all of the ingredients. Bring to a light boil. Cover and turn heat to simmer for 20 minutes, or until the rice has absorbed all of the liquid and is cooked through.
- Remove the bay leaf and garlic clove. Serve.
Notes
- If you are preparing this recipe as gluten-free, just be sure to use a brand of chicken broth that is known to be GF.
