This Blueberry Vinaigrette is the perfect salad dressing for a summer salad.
- ½ cup grapeseed oil
- ½ tablespoon Dijon mustard
- 1 tablespoon brown sugar
- 1 teaspoon minced shallots
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon Kosher salt
- ½ cup small fresh blueberries (or frozen and thawed)
- Mix all ingredients except for blueberries and whisk together well.
- Stir in the blueberries. Refrigerate until ready to serve.
