Combine sugar, rind and orange juice in small saucepan. Bring to a boil, stirring only until the sugar dissolves. Simmer for 10 minutes without stirring. Remove from heat and cool completely.
Whip cream until soft peaks form. Gently fold in orange syrup.
Serve over strawberries, other fresh fruit or your favorite dessert.
Notes
You may substitute blueberries or raspberries for the strawberries, in which case you would substitute lemon juice/rind for the orange.
