Preheat the oven to 375°F. Coat a 9-inch pie plate with cooking spray.
Place the Canadian bacon slices, slightly overlapping, around the side and the bottom of the prepared pie plate. Set aside.
In a medium bowl, combine the eggs, mayonnaise, Parmesan cheese, Brie, Italian seasoning and white pepper. Pour the mixture into the pie plate over the bacon. Bake for 30 minutes. After 15 minutes of baking, place foil over the quiche to protect it from overcooking and drying out.
Slice and serve.

If you are preparing this recipe as gluten-free, just make sure that the Canadian bacon and Mayonnaise are gluten-free.
