Instructions
Add water and a couple of pinches of salt to a large pot, and bring to a boil. Add the pasta, and cook for 8 to 10 minutes until tender; drain.
In a medium bowl, toss the chicken with Cajun seasoning.
In a large skillet, melt the butter and saute the bell peppers, mushrooms and green onions for 2 to 3 minutes, until the veggies are softened. Stir in the cream and half & half. Add the Parmesan cheese and remaining spices. Simmer until thickened a bit. Add the chicken and heat until warmed through.
Add the cooked pasta to the skillet, and toss to coat with the sauce.
Garnish individual servings with parsley and Parmesan cheese.
