Place pork in a large bowl. Sprinkle seasonings on top and use your hands to thoroughly mix them into the pork. Refrigerate for at least two hours to allow the spices to be absorbed into the meat.
Shape the sausage into patties. (You may also crumble the sausage for use in a recipe.)
To cook patties, heat a skillet over medium heat and cook the patties until browned, 3 to 4 minutes per side, depending on the thickness of the patties.
