Preheat the oven to 375°F. Line baking sheets with parchment paper.
Use and electric hand mixer to combine the butter and sugar in a large bowl until light and fluffy. Add the egg, extract and orange zest and beat until combined. Stir in the flour and almonds.
Drop by teaspoonfuls 3 inches apart onto the prepared baking sheet. Bake for 7 to 9 minutes. Cool on the cookie sheet for 2 minutes. Remove to a wire rack to cool completely. Store in an airtight container.
