Chocolate Cocoa Truffles are rich, creamy no-bake chocolate bites made with cream cheese and melted chocolate, then rolled in cocoa powder, powdered sugar, or sprinkles.
In a medium bowl, use an electric mixer to beat the cream cheese until smooth. Gradually beat in the powdered sugar, cream and vanilla extract. Stir in the melted chocolate. Cover the bowl and refrigerate until set, about 30 minutes.
Line a baking sheet with parchment or wax paper. Roll the chocolate into 1-inch balls. Set on the prepared baking sheet. Roll the chocolate balls into various toppings.
KEEP TRUFFLES REFRIGERATED UNTIL READY TO SERVE.
Notes
Chill the truffle mixture until firm enough to roll.
If it’s sticky, refrigerate longer.
Keep truffles refrigerated until ready to serve.
Store in an airtight container in the fridge for up to 5 days.
